IP Chicken and Rice Ingredients 1 1/2 Pounds chicken breast cut into bite size pieces 1 medium onion chopped 4 TBL Butter 3 garlic cloves minced 3-4 cups chicken broth (4 cups to make the rice more creamy) 1 1/2 TBL lemon juice 1 1/2 cups white rice 1 cup parmesan cheese shredded or grated 1 1/2 tsp salt 1/4 tsp black pepper Instructions 1. Set IP to saute, add butter and let melt, then add garlic and onion Saute for 3-4 minutes 2. Add chicken and stir, cook about 5 minutes or until no longer pink. Add rice, broth and lemon juice stirring well 3. Pressure cook for 8 minutes 4. IMPORTANT: When done cooking do a slow release for ONLY 2 minutes Stir well and add the parmesan cheese, salt, and pepper. Add more broth if you want it thinner. If there is a lot of liquid on top after cooking use saute function stirring well
